Grandmas Italian Dinner Recipe
My mother’s mother raised 5 children in a rural part of Washington State through the Great Depression. She could barely read or write, but she did know how to cook. She invented this recipe and flamboyantly called it, “Italian Dinner”, though I suspect that she had never eaten Italian food in her life. Whatever you call it, this is a dish I was raised on, it sure feels like comfort food for me. Enjoy!
- 1 lb ground hamburger
- 1 sliced onion
- 1 can tomato soup
- 1 big handful of uncooked egg noodles
- 1 can corn
- 1 can black olives
Brown the hamburger, drain the fat and set it aside in a bowl. Saute’ the onion until it is translucent. Add the soup and the noodles and simmer until the noodles are soft. Add the drained corn and olives and return the meat to the pan. Heat it through and serve it spooned over toasted hamburger buns or a scoop of rice.
