Asparagus Recipe

Lemon Mint Asparagus Recipe

This can be served hot or cold and is a great spring dish in 3 simple steps!


  • 2 1/2 Tbls lemon juice
  • 1 Tsp dried mint
  • 1 lb trimmed asparagus spears
  • 1/4 C feta cheese


  1. Mix together the mint and lemon juice. Set aside.
  2. Place the asparagus into a large pot of boiling water for about 45 seconds. Remove asparagus and put it into a bowl of ice water to stop the cooking process.
  3. Drain the asparagus, and place on a plate. Drizzle with the lemon mixture, and sprinkle feta over the top.
